Nachos with cheddar, Soignon goat cheese and corn and avocado salsa

Ingredients
Corn and avocado salsa
- 1 cup corn kernels
- 1 ripe avocado, cubed
- ⅓ cup chopped cilantro
- 1 shallot, very finely chopped
- 1 tbsp. olive oil
- Juice of ½ lime
- Salt and pepper
Nachos
- 1 package tortilla chips
- 1 tomato, diced
- 1 cup black or red beans, cooked or canned
- 1 cup cheddar cheese, grated
- 1 log (125 g) Soignon Goat Cheese, sliced into rounds
Preparation
- In a small bowl, combine all ingredients for the salsa. Set aside.
- Cover a large baking sheet with parchment paper. Spread the tortilla chips on the baking sheet.
- Sprinkle with diced tomatoes, beans and grated cheddar. Cover with goat cheese slices and broil in the oven for 2 to 3 minutes, until the cheese has melted and slightly browned.
- Pour the corn and avocado salsa over the nachos and serve immediately.
